Our 12-Week Commercial Kitchen Equipment Repair Training Program is designed to develop skills from the fundamentals through hands-on repair on every major equipment type used in commercial kitchens. You will read wire schematics, diagnose electrical faults, replace heating elements, service cooling systems, rebuild motors, and perform preventive maintenance on ice machines, refrigerators, deep fryers, salamanders, convection ovens, pizza ovens, steamers, and mixers. No prior experience required. This program is designed to develop entry-level skills — classes and enrollment will not begin until all required regulatory approvals are obtained.

12-Week Curriculum
Each week builds on the last — from electrical fundamentals through hands-on repair on every major equipment type, finishing with a full capstone assessment.
Electrical Fundamentals & Wire Schematics
Read and interpret wire schematics and sequence-of-operation diagrams. Use a multimeter to test voltage, resistance, and continuity. Understand series and parallel circuits, control boards, relays, and contactors. Apply lockout/tagout safety procedures on all commercial equipment.
Ice Machines — Troubleshooting, PM & Parts Replacement
Inspect evaporator plates, water distribution systems, and condenser coils. Diagnose error codes, refrigerant leaks, and compressor faults. Replace water inlet valves, harvest motors, and control boards. Build PM schedules to prevent scale buildup and extend machine life.
Refrigerators — Cooling Systems, Motors & PM
Service evaporator and condenser fan motors, door gaskets, and thermostat controls. Diagnose temperature drift, compressor cycling, and refrigerant leaks. Replace fan blades, start relays, and defrost heaters. Perform PM coil cleaning and door seal inspections.
Deep Fryers — Gas Systems, Heating Elements & Troubleshooting
Inspect gas valves, thermostats, high-limit controls, and heat exchangers. Diagnose ignition failures, temperature inconsistencies, and thermocouple faults. Replace gas valves, ignitors, and temperature probes. Establish oil-change and filter-cleaning PM intervals.
Salamanders — Burner Systems, Radiant Elements & Repair
Inspect burner assemblies, radiant heating elements, and gas valve operation. Diagnose uneven heating, ignition lockouts, and thermocouple failures. Replace radiant elements, thermocouples, and gas orifices. Perform PM cleaning of burner ports and reflector surfaces.
Convection Ovens — Heating Elements, Motors & Troubleshooting
Inspect blower motors, door seals, heating elements, and temperature controls. Diagnose uneven baking, fan motor failures, and control board faults. Replace heating elements, blower motors, and door gaskets. Develop PM checklists for calibration and seal replacement.
Pizza Ovens — Deck Systems, Gas Valves & PM
Inspect deck stones, burner systems, door springs, and temperature sensors. Diagnose hot spots, ignition failures, and thermostat drift. Replace temperature probes, gas valves, and door components. Perform PM cleaning of burner orifices and stone surfaces.
Steamers — Heating Elements, Solenoids & Water Systems
Inspect steam generators, solenoid valves, door gaskets, and water quality systems. Diagnose low steam output, leaks, and heating element failures. Replace solenoid valves, heating elements, and door seals. Build descaling and PM schedules to prevent scale-related breakdowns.
Mixers — Motors, Gear Systems & Hands-On Repair
Inspect gear assemblies, bowl lifts, agitator attachments, and motor brushes. Diagnose speed inconsistencies, overheating, and transmission wear. Replace motor brushes, drive gears, and bowl lift components. Perform PM lubrication, belt inspection, and safety guard checks.
Advanced Troubleshooting — Electrical Systems Across All Equipment
Apply wire schematic reading and electrical diagnosis to all nine equipment types. Trace multi-component faults using sequence-of-operation logic. Identify failed relays, contactors, control boards, and wiring harnesses. Practice systematic fault isolation from symptom to confirmed repair.
Preventive Maintenance — Schedules, Checklists & Documentation
Build PM schedules for every equipment type covered in the program. Complete inspection checklists, lubrication logs, filter replacement records, and calibration documentation. Learn how to present PM findings to restaurant managers and write service reports.
Capstone — Full Equipment Repair & Job Readiness
Perform end-to-end diagnosis and repair on live commercial equipment with no instructor guidance. Complete a timed troubleshooting assessment covering electrical, mechanical, and PM skills. Review job-site professionalism, parts ordering, and career placement preparation.
