The commercial gas range is the centerpiece of most restaurant kitchens. It runs from the moment prep begins until the last dish goes out — often 12 to 16 hours a day, six or seven days a week. That kind of workload means wear is constant, and service calls are a regular part of the equipment's life cycle.

For technicians, commercial ranges offer a steady stream of work. Understanding the common failure patterns and how to approach them systematically is essential for anyone building a career in commercial kitchen equipment repair.

Commercial Range Anatomy

A commercial gas range typically consists of:

  • Open burners — the primary cooking surface, typically 4 to 12 burners
  • Burner grates — cast iron or steel grates supporting cookware
  • Burner valves — control gas flow to each burner
  • Ignition system — standing pilot or electronic spark ignition
  • Oven section — one or two oven cavities below the range top
  • Oven burner and thermostat — controls oven temperature
  • Broiler section — some models include an infrared broiler
  • Gas manifold — distributes gas from the supply line to all burners

Each section has its own failure modes, and a thorough technician understands all of them.

Burner Fault #1: Burner Won't Ignite

Symptoms: Clicking without ignition on electronic ignition units. Burner lights intermittently. One burner won't light while adjacent burners work normally.

Likely causes:

  • Clogged burner ports
  • Dirty or mispositioned igniter electrode
  • Wet or contaminated igniter (from boilover)
  • Failed spark module
  • Blocked pilot orifice (standing pilot systems)

Diagnosis approach: Start with the simplest causes. Inspect the burner ports for blockage — food debris and carbonized grease are the most common culprits. Check the igniter electrode position and condition. On electronic ignition, listen for the spark — if you hear clicking but no ignition, the spark is present but the gas isn't reaching the igniter, pointing to a burner port or gas flow issue. If there's no clicking, the ignition module or electrode wiring is the problem.

Repair path: Clean burner ports with a wire brush and compressed air. Clean or reposition the igniter electrode. A failed spark module is a direct replacement. Always test all burners after any ignition repair.

Burner Fault #2: Yellow or Orange Flames

Symptoms: Burner flames are yellow or orange instead of blue. Soot deposits on cookware. Incomplete combustion smell.

What it means: Yellow flames indicate incomplete combustion — the gas isn't getting enough air to burn cleanly. This wastes fuel, produces carbon monoxide, and deposits soot on cookware and the range top.

Likely causes:

  • Blocked air shutter on the burner
  • Burner ports partially clogged
  • Incorrect gas pressure
  • Burner positioned incorrectly after cleaning

Diagnosis approach: Check the air shutter — it's the adjustable opening at the base of the burner that controls primary air mixing. A shutter that's been knocked closed or clogged with grease will cause yellow flames. Verify gas pressure at the manifold with a manometer.

Repair path: Clean and adjust the air shutter. Clean burner ports. If gas pressure is out of spec, adjust at the regulator. A properly adjusted burner should produce a steady blue flame with a slightly darker blue inner cone.

Burner Fault #3: Gas Valve Problems

Symptoms: Burner won't turn off completely. Gas valve is stiff or hard to turn. Burner output doesn't change when the valve is adjusted.

Likely causes:

  • Worn valve packing
  • Grease infiltration into the valve body
  • Valve stem corrosion
  • Valve seat wear

Diagnosis approach: A valve that won't fully close is a safety issue — the unit should be taken out of service immediately. Test by turning the valve to the off position and checking for gas flow with a leak detection solution at the burner. A valve that's stiff but functional can sometimes be freed with valve lubricant, but replacement is the more reliable long-term fix.

Repair path: Gas valve replacement is a standard repair. Always perform a leak test on all connections after valve replacement before returning the unit to service. Never attempt to repair a gas valve internally — replacement is the correct approach.

Oven Fault #1: Oven Won't Reach Temperature

Symptoms: Oven takes much longer than normal to preheat. Temperature displayed or measured is significantly below the set point. Oven cycles off before reaching set temperature.

Likely causes:

  • Failed oven thermostat or temperature probe
  • Oven burner partially blocked
  • Oven door gasket failure
  • Failed oven igniter (on electronic ignition ovens)
  • Low gas pressure

Diagnosis approach: Place a calibrated oven thermometer at the center of the oven and compare to the set temperature after a full preheat cycle. A consistent offset of more than 25°F indicates a thermostat calibration issue or probe failure. Check the door gasket for gaps — a compromised gasket allows heat to escape and prevents the oven from reaching temperature.

Repair path: Thermostat recalibration or replacement. Door gasket replacement. Oven igniter replacement (a common failure on electronic ignition ovens — the igniter weakens over time and can no longer open the gas valve). Gas pressure adjustment at the regulator if pressure is below spec.

Oven Fault #2: Uneven Oven Temperature

Symptoms: Food bakes unevenly — one side browns faster than the other. Hot spots and cold spots in the oven cavity.

Likely causes:

  • Oven burner partially blocked
  • Damaged or missing oven baffle
  • Oven door not sealing evenly
  • Thermostat probe positioned incorrectly after service

Diagnosis approach: Map the oven temperature with an infrared thermometer or multiple oven thermometers placed at different positions. A temperature variance of more than 25°F across the oven cavity indicates a distribution problem. Check the oven baffle — it's designed to distribute heat evenly and a missing or damaged baffle will cause hot spots.

Repair path: Clean the oven burner. Replace damaged baffles. Adjust or replace the door gasket. Verify thermostat probe position matches the manufacturer's specification.

Grate and Surface Maintenance

Cast iron grates take constant thermal cycling and physical abuse. Cracked or warped grates should be replaced — a grate that rocks or doesn't sit flat creates a safety hazard and makes cooking difficult. Keep grates clean to prevent grease fires and ensure even heat distribution to cookware.

Burner caps and heads should be removed and cleaned regularly. A buildup of carbonized food and grease in the burner ports is the single most common cause of ignition and combustion problems on commercial ranges.

Preventive Maintenance Schedule

  • Daily: Clean burner grates and caps, inspect flame patterns, check for gas odors
  • Weekly: Remove and clean burner heads, inspect igniter electrodes, check oven door gasket
  • Monthly: Full burner port cleaning, gas pressure check, oven thermostat accuracy test
  • Quarterly: Inspect all gas connections with leak detection solution, check valve operation, clean oven interior and burner
  • Annually: Full system inspection, replace worn gaskets, check manifold connections
