Gas appliances are the backbone of most commercial kitchens. Ranges, fryers, broilers, ovens, steamers, and griddles — the majority run on natural gas or propane. As a commercial kitchen equipment technician, you will work on gas appliances regularly. Done correctly, this work is safe and straightforward. Done carelessly, it can be fatal.

This is not a topic where you learn as you go. Before you touch a gas appliance, you need to understand the hazards, the safety protocols, and the correct procedures for every step of the job.

Understanding the Hazard

Natural gas and propane are both highly flammable. In the right concentration, they ignite easily — and in an enclosed space, an ignition can cause an explosion rather than just a fire.

The danger is compounded in commercial kitchens because:

  • Gas lines run throughout the building, often at higher pressures than residential systems
  • Kitchens have multiple ignition sources (pilot lights, electrical equipment, open flames)
  • Staff may be present and unaware of a gas issue
  • Ventilation varies widely — some kitchens have excellent exhaust systems, others do not

A small gas leak that goes undetected for hours can create a dangerous accumulation. Your job is to prevent that from happening — and to respond correctly when it does.

Before You Start Any Gas Work

Verify the gas type. Natural gas and propane have different pressures, orifice sizes, and combustion characteristics. A burner set up for natural gas will not operate correctly on propane, and vice versa. Confirm what's running to the appliance before you do anything.

Locate the shutoff. Every gas appliance should have a manual shutoff valve at the appliance connection. Know where it is before you start. Also know where the main gas shutoff for the kitchen is located — you may need it in an emergency.

Check for existing leaks. Before disconnecting anything, use a combustible gas detector or approved leak detection solution to check all connections, fittings, and flex connectors. If you find a leak before you've done any work, document it and address it before proceeding.

Inform kitchen staff. If you're shutting off gas to an appliance or section of the kitchen, let the manager know. They need to adjust operations accordingly and ensure no one attempts to use equipment that's been taken offline.

Leak Detection: The Right Way

There are two acceptable methods for detecting gas leaks:

Electronic combustible gas detector — A handheld device that detects gas concentrations in the air. Start at the appliance connection and work your way along the gas line. Move the probe slowly — gas is lighter than air (natural gas) or heavier than air (propane), so the direction you sweep matters.

Approved leak detection solution — A soapy solution applied to fittings and connections. Bubbles indicate a leak. This method is reliable for pinpointing the exact location of a leak once you've identified the general area with a detector.

Never use an open flame to check for gas leaks. This should be obvious, but it bears stating explicitly. A match or lighter held near a gas connection to "check for leaks" is not a technique — it's a way to cause a fire or explosion.

Working on Gas Connections

When disconnecting or reconnecting gas fittings:

  • Use two wrenches — one to hold the fitting, one to turn the connection. This prevents torque from being transmitted to the gas line itself.
  • Use only approved pipe thread sealant (pipe dope or PTFE tape rated for gas) on threaded connections. Do not use standard plumber's tape.
  • After reconnecting, always leak-check every fitting you touched before restoring gas service.
  • Never overtighten fittings. Brass fittings in particular can crack under excessive torque.

Lighting and Ignition Systems

Modern commercial appliances use electronic ignition — a spark igniter that fires when the burner valve is opened. Older equipment may use standing pilot lights.

When relighting a pilot or testing ignition:

  • Purge the line before attempting to light. If gas has been off, there may be air in the line. Open the valve and allow the air to purge before attempting ignition.
  • Never hold your face directly over a burner when lighting. Position yourself to the side.
  • If the burner doesn't light after two or three attempts, stop. Close the valve, allow any accumulated gas to dissipate, and investigate before trying again.
  • A burner that lights but immediately goes out usually indicates a thermocouple or thermopile issue — the safety device is not sensing the flame and is shutting off the gas valve. This is a safety system working correctly; diagnose the thermocouple before assuming a gas supply problem.

When Something Goes Wrong

If you smell gas and cannot immediately identify and isolate the source:

  1. Do not operate any electrical switches (including light switches) — a spark can ignite accumulated gas
  2. Evacuate the area and get everyone out of the kitchen
  3. Shut off the main gas supply if you can do so safely without entering the affected area
  4. Call the gas utility's emergency line from outside the building
  5. Do not re-enter until the utility has cleared the space

This is not an overreaction. Gas accumulation in an enclosed space is a serious emergency.

The Foundation of Safe Gas Work

Safety in gas appliance repair comes down to three things: knowing the hazards, following the correct procedures every time (not just when someone is watching), and having the confidence to stop and reassess when something doesn't seem right.
